SERVINGS

INGREDIENTS
2 lbs San Marzano Tomatoes - I used 2 big cans - 1 Cento and 1 Nina
3 TBSP Extra Virgin Olive Oil
Salt - to taste
4-5 Cloves of Garlic - Roasted Garlic Paste or Cloves
1/2 Cup Fresh Basil
DIRECTIONS
- In a large bowl, smash up the San Marzano Tomatoes as much or as little as you’d like. If you want a very smooth sauce, blend your tomatoes in a blender.
- In a large sauce pan, on medium heat, drizzle 3 TBSP of Extra Virgin Olive Oil and then add in your Garlic cloves or Paste.
- Brown your garlic until it is just toasted and sizzling and then add in your tomatoes and salt, stir.
- Tear up about a 1/2 cup of fresh basil and drop in your leaves, stirring. If you like it fine, chop it up beforehand.
- Stir regularly and let your sauce simmer on low for 25 minutes+. However long it takes for you to reach the desired taste and consistency.
- Pour over a pot of fresh pasta or let it cool and put it in a jar in the refrigerator for up to 5 days. This has no preservative so it will not stay good for much longer than that.
- You may can this recipe, just pour into a jar, add a 1/4 TBSP of lemon juice to the top and finishing canning it as you would.
