INGREDIENTS
2 lbs of Large Shrimp - Peeled and Deveined
DREDGE:
1 Cup of Flour
1 Tsp Salt
1/2 Tsp Pepper
1/2 Tsp Onion Powder
PAN SAUCE:
2 TBSP Olive Oil
1 TBSP Minced Garlic
4 TBSP Butter
Juice of 1 Lemon
1 Cup of White Wine
1/2 Cup of Capers
PASTA:
8 oz Angel Hair Pasta
6 Cups of Water
1 tsp Salt
2 TBSP Olive Oil
1 Tsp Minced Garlic
GARNISH:
Lemon Zest
Grated Romano
Chopped Parsley
DIRECTIONS
Make sure your shrimp are peeled and deveined.
In a ziplock bag combine flour, salt, pepper and onion powder to make your dredge. Pour your shrimp into the ziplock bag and coat your shrimp well.
In a pot, bring 6 cups of water and a tsp of salt to a boil.
In a pan, over medium heat, add 2 TBSP olive oil. Once the olive oil pops and sizzles when you drop the shrimp in, add in each piece of shrimp ensuring that it is nestled into the pan to brown each side. After 1-2 minutes of browning, flip each shrimp over and brown the other side.
Once your shrimp are browned, add into the pan minced garlic, butter, lemon juice, white wine and capers.
Saute the shrimp in your sauce and stir until combined. Keep your heat low to medium, allowing the sauce to simmer.
Drop your angel hair pasta into the boiling water and cook for 2 minutes.
While your pasta cooks, bring 1 tbsp of olive to medium heat and toast 1 tsp of minced garlic.
Turn off the heat and drop in your cooked pasta. Stir it around to allow it to absorb the olive oil and garlic.
Time to plate! Start with a nest of angel hair pasta, place your shrimp on top and pour the remaining pan sauce over top. Add a garnish of lemon zest, grated Romano and fresh parsley if you desire!
