INGREDIENTS

3/4 Cup of Caster Sugar

1 1/2 Cups Almond Flour

1 Pinch of Salt

Zest of 1 Orange

2 Egg Whites

1 1/2 tsp Almond Extract

1 tsp Vanilla

Powdered Sugar

DIRECTIONS

  1. Preheat your oven to 350ºF and line a baking sheet with parchment paper.

  2. In a bowl combine sugar, almond flour, salt and the zest of 1 orange. Mix up, making sure to break up any clumps. Then make a well in the center.

  3. Into your well add your 2 egg whites, almond extract and vanilla.

  4. Mix together until you have a dough.

  5. With a medium sized scoop, scoop your dough balls and roll them in powdered sugar.

  6. Flatten with your hand into circles, keeping in mind that these cookies don’t rise or spread.

  7. Bake on a parchment lined baking sheet, 1 inch apart, at 350ºF for exactly 13 minutes.

  8. Remove and let cool on the pan for 5 minutes and then move to a baking rack to finish cooling.

  9. Store in an air-tight container for up to 3 days on the counter.
